Prison Food Consulting is led by Dr. Mitchel Holliday and is designed to support organizations and represent individuals dealing with correctional nutrition-related issues and disputes.  


For more than 13 years Dr. Holliday has helped to enhance the nutrition care of the United States largest correctional system and has a broad range of correctional experience including:

 

  • Health and food service project management

  • Procedure development

  • Quality and process improvement

  • Working with senior executive staff and attorneys on correctional nutrition-related public health and medical issues

  • Administrative remedies

  • Foreign and domestic intergovernmental legal and budgetary communications including, Senatorial, Congressional, U.S. Department of Justice, U.S. Attorneys’ Offices, and Office of the President Responses

Dr. Holliday also has experience consulting with private law firms, state attorney general offices, and public health offices.  He has conducted research and authored numerous publications and presentations on correctional public health nutrition, clinical nutrition, and food service-related matters.
